Blueberry buttermilk pie
Ingredients
- 1 9 inch pie crust (graham cracker pre-made crust works well)
- 1 cup fresh blueberries
- 3 eggs
- 1 cup buttermilk
- 4 tablespoons melted butter
- Juice from 1 lemon
- 1 teaspoon vanilla extract
- 1 ½ cup sugar
- ½ cup all-purpose flour
- Dash of salt
Process
- Preheat oven to 325 degrees.
- Place blueberries evenly in pie crust.
- In a large bowl, combine sugar, flour, and salt by whisking thoroughly
- In a separate large bowl, whisk together eggs, buttermilk, melted butter, lemon juice, and vanilla extract.
- Add the flour mixture to the egg mixture and whisk until smooth. Pour into the pie crust.
- Bake for 1 hour or until golden brown. It should still be somewhat soft in the center.
- Remove from the oven and cool on the counter top. Once cooled enough, place into the refrigerator for at least 3 hours to set.

Great, recipe!! Just made it. Used a Diamond Pecan Pie Crust. Cooked perfectly. Not too sweet, it’s perfect!!
